1. CA store
CA store is defined to keep fruit fresh and prolong the storage and shelf life of fruits by reducing the oxygen content of environment, controlling the content of carbon dioxide so as to decrease the respiration rate, the loss of nutrients and the evaporation of fruit and inhibiting the decomposition of pectin as well as fruit ripening of ethylene while keeping appropriate temperature.
In normal atmosphere, the content of oxygen is 20.9%, and the content of carbon dioxide is only 0.03%. The contents of oxygen and carbon dioxide are required 2%-5% and 0%-5% in CA store respectively for keeping the original fragrance, quality and nutrition of fruits and reducing the loss as well as prolonging fresh period without pollution. CA store is more perfect in fresh keeping technology than cold storage.
2. Development of CA store
In order to prolong storage the time of fruits and vegetables, people used the storage methods of drying, pickling, cellar and cylinder which could not solve the problems of keeping fresh for long storage.
In 1860, Benjamin established a high air tightness store room in England, in which the apples were better in quality,it was an early form of controlled atmosphere store.
In 1916, Franklin Kidd of Cambridge, England studied on the inhibition of carbon dioxide toseed breathing. From 1918, he and Gyril West studied the impact of the air composition on fruits in the controlled storage environment in non-refrigerated store condition. Thereafter, many countries began to do research of controlled atmosphere store.
In 1914, Smock, van doren in Cornell University changed the phrase "gas storage" to “controlled atmosphere” (CA) on a bulletin, which is still in use nowadays.
With the development of science and technology, people are growing awareness of physiology of fruits and vegetables after harvest, and the study on CA storage is getting increasing intensive. In 1960s, China began to study the technology of CA storage. In 1978, the first 20 tons pilot CA store room was built in Beijing. Because of backward in technology and small demand on China market, there was no scale in CA storage. However, with the rapid development of economy and the improvement of technology, large and medium-size CA store rooms have been built in the main production bases of fruits and vegetables. The equipment of domestic CA storage is gradually reaching or approaching advanced international standards.

More than 200 CA projects have been accomplished for storing the fruits and vegetables such as apples, pears, oranges, dates, pomegranate, grapes, kiwis, chestnuts, plums, bananas, mangos, Chinese cabbages, garlic sprout, burdock, onions. The fresh period can reach 1 ~ 10 months, for example, the quality of apples stored in CA store room for 1~10 months is similar to fresh ones just picked and its rotted rate is less than 3%.
Ripening is the comercial technology which supplies the suitable external environment and ripening gas to accelerate the maturity of fruits and vegetables so as to reach the color, aroma, sweetness and taste of processing maturity after their physiological maturity. The ripening equipment is used to generate the ripening environment and gas.
